chore: remove bogus stackhawk.yml and gitignore generated configs

stackhawk.yml was a test artifact with fake data. Generated configs
should not be tracked — setup_stackhawk_for_project creates them
per-project at runtime.

docs: update README and CLAUDE.md for trimmed 7-tool set

Remove references to deleted tools (sensitive data, analytics dashboard,
schema dump, scan instructions). Update features, tool table, examples,
and IDE integration sections to reflect the focused developer workflow.
